More thoughts...
I was afraid that all of this quietness would drive me crazy; that I wouldn't be able to handle it. I know myself and know what my mind does when left to itself for too long. I'm not going to lie - some days have been rough. Some days have been hibernation days, other days not so bad. All and all, I think this is exactly what I have been needing though. I think I've needed (and still do) this time to myself to just think. And I've been thinking a lot! Thinking about health, peace, faith, balance, so many different things. I think that I am at a growing point with a number of these things too -- something that I am both excited and nervous about. We'll see how it all ends up working out.
When thinking more about my health, I've started really paying attention to what I am eating. What exactly is being put in my body. Some days contain much more sugar than really is needed but I am not perfect. Cutting out caffeine over two months ago has been a tremendous help. My next elimination -- meat. I know, here we go again. I can't promise that I won't have slips here and there, I can't say that meat doesn't sound good (heck - I think a pulled pork sandwich sounds awesome), but I can say that as long as I am consciously thinking about what I am getting ready to eat, it will not contain meat. And so far, I've been doing alright. Each day veggies are sounding better and better. This also gives me a chance to expand on what I am eating.
The other day when we were at the store, we picked up different veggies. One of them being asparagus. Matt really likes it. I, however, do not! Never have, don't ever care to. See the stubborn child coming out :) Anyway, I figured that we needed to do something with it so it didn't go to waste. I began looking at different recipes online, hoping to find one that would mask the horrible flavor. I ran across this one and figured we would give it a try. It also gave me another new food to try -- couscous (which I think I fell in love with). Surprisingly, we both really ended up liking this. Added a clove of garlic and thought that was a good choice.
I can't believe that I am going to admit this... but the asparagus actually tasted good. Next hated food -- eggplant (although it will probably be awhile still).

Asparagus also tastes really good baked with some Extra virgin olive oil on it. Also, try boca burgers for a veggie burger they are amazing, especially the all American flame broiled! Finally, I have some really good veggie recipes, even one for eggplant parmagian (sp?) Let me know if you want me to email you some!
Asparagus can really taste good when prepared a certain way!! So you are going to stop being a carnivore for your health. Make sure you do your reading on what supplements or other foods you will need to replace the lost nutrients. My sister in law does her best with being a vegetarian, and she says she feels better. Sometimes she has meat because by nature, we are carnivores...so. But it has helped her. Let me know if you want some nice vegetarian recipes!
